

YUKON CORNELIUS
1.5 oz small batch whiskey
1 oz mulled wine syrup
1 oz aquafaba (or 1 egg white)
.75 oz lemon juice
3 dashes peychaud’s barrel aged bitters
fill a rocks glass with ice & set aside. add all ingredients to an empty shaker, shake for ~30 seconds. add ice from rocks glass to shaker, shake ~30 seconds. strain into rocks glass, large ice cube optional.
GARNISH WITH star anise
MULLED WINE SYRUP
1 c water
1 750ml bottle malbec
zest of 1 large orange
1 large cinnamon stick
10 green cardamom pods
3-star anise
12 cloves
1 c organic sugar
simmer all ingredients except sugar for 15 minutes. stir in sugar, simmer for 15 more minutes. remove from heat and let cool. strain solids and store in refrigerator.

GOOD OLD FASHIONED FAMILY CHRISTMAS
1.5 oz small batch whiskey
.5 oz aromatic honey syrup (use .75 oz if you like a sweeter sip)
3 dashes peychaud’s barrel aged bitters
add all ingredients to rocks glass with large ice cube. stir ~30 seconds to chill.
GARNISH WITH dried orange or fresh orange peel
AROMATIC HONEY SYRUP
2 c water
1.5 c honey
5 star anise
1t black peppercorns
15 cloves
1 orange peel
bring water, spices and orange peel to a simmer. stir in honey, return to simmer and simmer 5 minutes.remove from heat and let cool. once cool, strain out solids and store refrigerated.

HOUSE OLD FASHIONED
1.5 oz small batch whiskey
1 barspoon barrel aged maple syrup
3 dashes angostura bitters
add all ingredients to rocks glass with large ice cube. stir ~30 seconds to chill.
GARNISH WITH dried orange or fresh orange peel

IMBOLC OLD FASHIONED
1.5 oz small batch whiskey
1 barspoon vanilla bean syrup
3 dashes peychaud’s barrel aged bitters
add all ingredients to rocks glass with large ice cube. stir ~30 seconds to chill.
GARNISH WITH fresh lemon peel
vanilla bean syrup
1 cup water
1.5 cups organic sugar
1 vanilla bean, split
add water and vanilla bean to saucepan & bring to a boil. stir in sugar until dissolved. continue to heat for 10 – 15 minutes without boiling. remove from heat, cool & strain.

OH, HONEY, HONEY
1.5 oz small batch whiskey
.75 oz lemon-vanilla honey syrup
.5 oz lemon juice
2 dashes orange bitters
1 oz aquafaba
add all ingredients to an ice filled shaker, shake ~30 seconds to chill and create foam. hawthorne strain into 9 oz glass.
GARNISH WITH dried lemon
LEMON-VANILLA HONEY SYRUP
16 oz water
16 oz honey
1 large lemon, sliced (about 8 slices)
1 vanilla bean, split
add water, lemon slices and vanilla bean to saucepan over medium-high heat. bring to boil, stir in honey until dissolved. continue to heat for 15 minutes, keeping just below a simmer. remove from heat, let cool & strain.
